Caroline and Ilka are back at it again with an easy Sour Cherry Cake that anyone, baker or otherwise, could make!

RECIPE
MEGGYES PITE - SOUR CHERRY SQUARES
Serves 8-10
Ingredients
- 150 g butter, softened
- 150 g caster sugar
- 2 eggs at room temperature
- 250 g flour
- 14 g baking powder 100 ml sour cream
- 100 ml milk
- 1⁄2 tsp vanilla bean paste Zest ofhalf a lemon
- 500 g pitted sour cherries (eitherfresh ordrained from the jar)
Method
- Butter a 20×30 cm cake pan and dust with flour.
- Cream butter and sugar. Add the eggs and beat until wel combined. Add the flour and baking powder.
- Add the sour cream, milk, vanilla bean paste and lemon zest and mix until fully incorporated.
- Transfer the batter to the prepared pan and smooth out the top.
- Arrange the sour cherries on the top and gently press them into the batter.
- Bake in a preheated oven at 180°C for 30-40 minutes or until a cake tester comes out clean.
- Remove from the oven and leave to cool in the pan. Cut into squares. Dust with icing sugar. Serve chilled from the fridge. Eating this cake cold is delicious! If the top looks like it is browning too fast, cover with greaseproof paper for the remainder of the cooking time.
