Story: Honey, Laksa, Butter Scallops

Alex dishes up her honey, laksa butter prawns - Luxurious, fragrant, exotic, sweet!
Ingredients
- Scallops
- 150g softened butter
- 2tbsp laksa paste
- 1 tbsp honey
- Flaky salt
- Olive oil
Method
- Pat dry the scallops and leave them on a small plate in the fridge
- In a bowl, mix softened butter, 2tbsp of laksa paste, and 1 tbsp of honey. I have gently warmed this honey in the microwave, just to make it a little easier to combine.
- Sprinkle in a pinch or two of flaky salt, and mix until all ingredients are well incorporated
- Get a pan going on medium-high heat
- Remove scallops from the fridge and lightly drizzle them with olive oil and some salt
- Pop scallops onto the hot pan. (Scallops cook very quickly, so it is important that we keep an eye on them!)
- Once the lower half of the flesh starts to turn opaque, and a nice brown colour starts to form on the bottom side, flip them over
- Once caramelisation starts to happen on this side, throw some of the butter into the pan, and turn down the heat.
- Remove the scallops from the pan and place them on a small serving plate or bowl. (Remember they will continue to slightly cook whilst resting, so it is important we remove them just before they are fully cooked)
- Now, with the excess melted butter and pan juices, spoon it all over the scallops and sprinkle some fresh chives and a sprinkle of salt.
